* IN SEASON FROM MAY TO JUNE, their distinctive creamyflavour cant be mistaken - great served with melted b.utter or mayonnaise and chives.
* To prepare them dont everp.eel as most of the delicate flavour lies just under the skin. Simply rub the smooth under running water.
* Now for a real chefs secret- pop them into a pan of boiling, not cold water. Add a sprig of mint and salt to taste. Cook until tender and serve piping hot or warm.
