CLOOTIE DUMPLING | a.taste.of.scotland

1lb of self raising flour
1 apple grated
4oz of fresh breadcrumbs
8oz of currants
4oz of sugar
12 oz of raisins
4oz of shredded suet
Half pint of milk
Half a tsp of salt
1tbsp of treacle
1 tsp of mixed spice

Mix flour,breadcrumbs,shredded suet,salt and mixed spice
Add grated apple,currants and raisins mix well
Stir in milk and treacle until well blended
Scald cloth in boiling water then dust with flour
Place mixture on cloth
Tie securely,leaving room for it to swell
Have ready a saucepan of boiling water
Place a plate on the bottom of the pan and put pudding on it
Boil for 3 to 4 hrs
Have a kettle of boiling water handy and add some to pan every hour
When dumpling is ready,remove cloth gently and dry pudding off in the oven
