Blistered Tomato & Prawn Pasta

350g cherry tomatoes. 2tbsp olive oil. 2tsp caster sugar. 350g penne pasta. 300g cooked tiger prawns, defrosted if frozen. 1 bunch spring onions, finely sliced. 40g fresh rocket. 4tbsp green olive tapenade. Juice 1/2 lemon.

Preheat the grill to medium-high. Place the tomatoes on the grill, drizzle with 1tbsp of the olive oil, sprinkle with the sugar and grill for 8-10 mins until blistered and lightly charred.

Meanwhile, cook the pasta instructions, drain and return to the pan. Add the remaining oil, tomatoes and the remaining ingredients. Season, combine well and serve.
